Tomato is considered a super food. It is a powerhouse of nutrients that are antioxidants which help fight ageing as well as cancer.

Finely chop fresh tomatoes, cucumbers, onions, green peppers and black olives. Make a dressing using crushed garlic, olive oil, lemon juices, salt as well as pepper. Use about a tablespoon of dressing in about 100gms of chopped salad. Refrigerate and enjoy your salsa with a multigrain toast or a chapati wrap.

Tomato Berry Juice

Blenderize fresh red tomatoes with Indian gooseberries i.e. amla. Add grated ginger, and fresh mint leaves. Strain and enjoy this tart juice on a sunny winter afternoon.

Roasted bell pepper and tomato soup.

Dry roast a bell pepper in an oven until slightly charred. You can roast it over an open flame or coal grill. Blenderize two ripe tomatoes and a roasted bell pepper and strain. Heal a pan, add crushed garlic in olive oil, add the puree, salt, pepper and a hint of jiggery. Serve the soup hot garnished with fresh basil or mint leaves.
